Shrimp Cocktail Salsa

Back in 2010 I graduated from a Bible college in Pennsylvania; where I have so many fond memories of learning experiences, time with close friends and time with God! During my time there I was able to try lots of new things …. one of which was something similar to what I call “Shrimp Cocktail Salsa”! I am sure this is not close to the same recipe or even what the actual name of the recipe is called but it is my own reenactment of what I remember and loved so much!

I absolutely love seafood and shrimp happens to be my favorite! This has got to be one of the most unique things that I have tasted with all the flavors of shrimp, cilantro and spicy packed into a yummy Salsa! I know it sounds odd… but if you like shrimp with cocktail sauce then I am sure you will like this  shrimp salsa with a Mexican twist!

This Salsa is a great little appetizer to add to your meals; even for the holidays it is a very festive looking dish! I personally like it served with some ritz or club crackers but you can always try other choices like tortillas or your favorite kind of crackers!

Shrimp Cocktail Salsa

This Salsa is a great addition to serve as an appetizer! Its unique flavors of shrimp, cilantro and tomatoes packed all in a salsa is one you will be sure to love!

Ingredients

  • 1 T. Fresh lime juice
  • 1/2 C. Tomato Juice
  • 1/4 C. Diced onions
  • 1 large Diced Tomato ( I use Romas)
  • 1 Jalapeno diced small
  • 3/4 C. Salad Shrimp PreCooked
  • 2-3 T. Fresh Cut Cilantro
  • 1/3 C. Diced Avocado (optional)
  • Salt and Pepper To taste

Instructions

  • In a medium size bowl; mix together your spices, lime juice,tomato juice, onion, tomatoes and jalapenos.
  • Lightly stir in your shrimp, cilantro and avocado if using. Place in Refrigerator and chill for at least 1 Hour before serving with your favorite crackers or tortillas.
