Today, I am excited to share with you all… one of my favorite Casserole Recipes! This Broccoli Casserole is a favorite around our holidays, some potlucks, or just as a weekday side! Needless to say… it is a loved dish and is the perfect addition to almost any meal!

All you need is a few ingredients and its just the right amount to achieve the perfect taste! Its cheesy, So Creamy and Delicious! Really… this is just my own rendition of a few of my favorite recipes combined. It uses all of my favorite ingredients…With extra cheese!

Making the Perfect Broccoli Casserole…

  • Preheat oven to 350- Grease a Medium casserole Dish. I use a 2 1/2 Quart Dish.
  • Start with two Medium Size heads of Broccoli- Yes, I highly recommend using fresh! I have maybe used frozen one time for this Recipe…
    • The fresh really does give you a better tasting Casserole. If… for some reason you need to use frozen…then you will want to use about 24 oz. of Frozen Broccoli Cuts.
  • Slice off the large stem of the Broccoli and discard.
  • Then cut or break into small bite size florets. I also slice the tender stems from the florets and add them in as well.
Broccoli Casserole
  • Thoroughly rinse with cool Water.
  • Next; I use this steamer basket that I got off of Amazon for a reasonable price! Check it out Here!
    • If you do not have a steamer basket or steamer; then you can cook Broccoli by placing in about 1 in. of boiling water; cover and simmer until tender.
  • With the steamer ; Add about 3/4 in. of water to bottom of a pot and bring to boil; set steamer basket inside.
  • Add Broccoli; Mine is always full to the brim! :0
  • Cover and turn to a low heat and cook till tender.
  • Notes on Cooking Broccoli– This is up to your Preference!
    • Most people recommend steaming Broccoli 4-6 Minutes– and this will keep your Broccoli a beautiful bright green. (This personally is a little Crunchier then I like mine for a casserole :/ )
    • I prefer to cook Mine 7-9 Minutes– Yes I lose some of the Vibrant green Color but I like my Broccoli to be Pretty Tender. (Surely I’m not the Only one ?)
  • While Broccoli is cooking; Mix together Cream of Chicken soup, Sour Cream, Cheddar Cheese and Salt and Pepper.
  • Add cooked Broccoli to your ingredients and mix till combined.
  • Spread into Prepared Casserole Dish.

Topping…

  • Crush up- one Tube of Ritz Butter round Crackers; and evenly spread over Casserole
  • Melt one stick of butter and spread evenly over crackers.
  • Place in the oven and cook for 30 minutes; Until crackers are a golden brown and casserole is Bubbling on Sides.

Broccoli Casserole

Broccoli casserole is A favorite around our Home... especially around the holidays! It hard to beat this Creamy and Easy Side Dish!

Ingredients

  • 2 Medium Heads of Broccoli or 2- !2 oz bags of frozen Broccoli cuts
  • 1 10.5 oz. Can Cream Of Chicken
  • 1 Cup Sour Cream
  • 2 1/2 Cups Cheddar Cheese
  • 1/8 tsp. Salt
  • 1/8 tsp. Pepper
  • 1 Tube Crushed Ritz Crackers
  • 1 Stick Butter melted

Instructions

  • Preheat oven to 350- Grease a Medium casserole Dish. I use a 2 1/2 Quart Dish.
  • Slice the large stem off the Broccoli heads and discard. Cut or break into small bite size florets and slice the tender stems from the florets and add to the broccoli as well. Rinse Broccoli.
  • Bring about 1 in of water to Boil in a medium size saucepan ; add Broccoli to water or in a Steamer basket. Cover with Lid and turn burner to low heat. *
  • Cook For 4-6 Minutes if your like your Broccoli a little Crunchier or 7-9 Minutes for a more tender Broccoli. *
  • While Broccoli is cooking; Mix together Cream of Chicken soup, Sour Cream, Cheddar Cheese and Salt and Pepper.
  • Add cooked Broccoli to your ingredients and mix till combined; Spread into Prepared Casserole Dish.
