Peanut Butter Fudge Candy

Todays recipe is taking me all the way back to my childhood.. which keeps feeling further and further away! This is something my mom would make my sisters and I when we were little. These quickly became my absolute favorite thing that she would make for us as a little treat! It was actually called peanut butter fudge, but it is much more of a Candy to me then Fudge so I am calling it peanut butter fudge candy!

I remeber asking my mom if she would make this often as a child. As I got older and was learning to cook on my own, she would ask me to try and make it myslef. So I did… and I failed over and over and over again! This was just because patience was not something I had back then!

Now that I have three kids of my own, I have alot more patience! I can see why my mom had plenty of it! πŸ™‚ This is not something thats hard to make, but as a candy it needs to reach the perfect temp! Candy should be 235 degrees or resemble a soft ball when dripped into a glass of cool water.

Needless to say, I did finally take my time and was able to make the most perfect, melt in your mouth,Peanut Butter fudge candy that was worth the wait!

Peanut Butter Fudge Candy

These peanut butter fudge candy is more of a cady then afudge but is a sure melt in your mouth treat to make around the holidays!

Cook Time10 minutes
Total Time15 minutes

Servings: 25 squares

Ingredients

  • 1 C. Granulated sugar
  • 1 C. Brown Sugar
  • 1/2 C. Milk
  • 1/4 C. Brewed Strong Coffee
  • 2 T. Light corn Syrup
  • 1/3 C. Peanut butter
  • 1 tsp. Vanilla extract

Instructions

  • Line a 8x8 dish with parchment paper or grease well with butter.
  • Using a good thick pot; add both sugars, milk, coffee, and corn syrup. Bring to a rolling boil over medium high heat. Reduce heat to low.
  • Simmer on low; stirring occassionally, until temp reaches 235 or soft ball forms in glass of cold water. ( See pic above) remove from heat (This is roughly around 10-15 min)
  • Quickly stir in your peanut butter and your vanilla;mix well. Working quickly; pour into your dish.
  • Allow to cool completley before cutting into small squares.

Notes

I double this recipe alot around the holidays so there is plenty to go around!
