So who is ready for Spring?!? I normally enjoy winter! I love cozying up by the fireplace and drinking a warm cup of hot cocoa! This winter… we have seemed to catch every sick bug that has flown by!Needless to say; I’m over it! During this dreary winter, I have managed to stay well enough to make some easy dinners like this Chicken Parmesan!

I love anything Italian dishes and one of my favorite thing to eat growing up was just a basic spaghetti. I would make spaghetti all the time now if my husband like it as good as I do! Unfortunately he doesn’t πŸ™

He does like this Chicken Parmesan really well and he even says it “His Favorite”. Although he seems to have a very large list of Favorites!lol At least I know its high up on his long list somewhere!

Chicken Parmesan

Chicken Parmesan is a easy Italian dish to add to your meal rotation. This chicken is tenderized,breaded and fried. Lastly smothered in your favorite tomato sauce and cheese and baked to perfection! Serve this over your favorite pasta!

Ingredients

  • 2 Chicken Breast Cut into halves/ making 4 filet
  • Dash Salt and Pepper
  • 1/3 C. Oil
  • 6 T Melted Butter
  • 3/4 C. Bread Crumbs
  • 1/3 C. Grated Parmesan Cheese
  • 2/3 C. Flour
  • 24 Oz. Marinara (Divided) More for pasta
  • 1 C. Mozzaerella Cheese
  • 2 Eggs Beaten
  • Parmesan and parsley Optional

Instructions

  • Preheat oven to 400. Pour about 2 Cups of marinate in bottom of a extra large casserole dish.
  • Slice your chicken breast into halves; making them into 4 filet.Using a meat mallet;beat each filet until starts to flatten on both sides. Sprinkle with salt and Pepper.
  • Heat your 1/2 of your oil over medium heat in a large cast iron or stainless skillet.
  • Using 4 containers; Melt your butter in one. In another bowl your beaten eggs. The third container your flour and last container your breadcrumbs and Parmesan.
  • Once your skillet is ready; coat each chicken into your butter then into flour, eggs and lastly your bread crumbs. Place 2 into skillet and fry on both sides until a light golden color;4-6 min. Remove and place in prepared casserole dish. Pour in your remaining oil and pep eat for the other two breast.
  • Evenly spread 1/4 C. of Marinara over each chicken, then 1/4 C. of mozzarella. Sprinkle with Parmesan and parsley. (Optional)
  • Place in oven and bake 8-10 minutes until cheese has melted. Serve over your favorite pasta.
