Peanut Butter Fudge Candy

These peanut butter fudge candy is more of a cady then afudge but is a sure melt in your mouth treat to make around the holidays!

Ingredients

  • 1 C. Granulated sugar
  • 1 C. Brown Sugar
  • 1/2 C. Milk
  • 1/4 C. Brewed Strong Coffee
  • 2 T. Light corn Syrup
  • 1/3 C. Peanut butter
  • 1 tsp. Vanilla extract

Instructions

  • Line a 8x8 dish with parchment paper or grease well with butter.
  • Using a good thick pot; add both sugars, milk, coffee, and corn syrup. Bring to a rolling boil over medium high heat. Reduce heat to low.
  • Simmer on low; stirring occassionally, until temp reaches 235 or soft ball forms in glass of cold water. ( See pic above) remove from heat (This is roughly around 10-15 min)
  • Quickly stir in your peanut butter and your vanilla;mix well. Working quickly; pour into your dish.
  • Allow to cool completley before cutting into small squares.

Notes

I double this recipe alot around the holidays so there is plenty to go around!
