So.. I absolutely love pasta… its one of my biggest guilty pleasures! On that note; I Love to come up with new creations using pasta and the possibilities are endless! This Mexican Lasagna is just one recipe of many that I would like to share of my pasta creations. I also do a Italian lasagna that is similar to this one I learned in my early 20’s working for a lady in my church. She owned a small cafe in town where I learned and shared some of my favorite memories in Life!( I love you Wrolen Pin Gang!)

Anyways this is the typical layers of regular lasagna using lasagna noodles with a Mexican twist! The really good part is.. its super easy and I normally have the ingredients on hand. Best of all, you can pre prep the night before and throw in the oven when ready! I have not yet tried to freeze this recipe but I would think it would do good. Let me know if you give it a try?!?

Mexican Lasagna
Ingredients
- 1 lb. Burger I have used Venison in this
- 1 15 oz. Can Black Beans drained
- 1/2 Pack Taco Seasoning
- 2 1/2 C. Salsa
- 1 C. Sour Cream About 2/3 per layer
- 3 C. Mexican Shredded Cheese About 3/4 C. Per layer
- 9 Lasagna Noodles Uncooked
- 1/4 C. Milk
- Cilantro Optional
Instructions
- Preheat oven to 350º
- In a Casserole dish ( I use an 8x11) do a layer of 1/2 C. of salsa on bottom of dish.
- In small bowl whisk together your sour cream and milk until smooth.
- In a large skillet over medium heat: brown meat,then drain off excess grease. Next add your taco seasoning, 2 C. of remaining salsa and your beans; allow to heat thru. remove from heat.
- Now its time to start layering. There will be a total of 3 layers as following: Noodles (3) Sour Cream ( about 1/3C. per layer) Cheese ( about 3/4 C. per layer, will be an extra 3/4 C. for topping) Thin layer of Meat and Bean sauce ( Divide into Thirds)
- Once you ended in your 3rd layer of meat; cover with aluminium foil and place in the oven for about 1 -1 1/2 hour.Mine typically takes about 1 hour and 15 minutes.
- Remove from oven and immediately uncover to top with your remaining cheese so it can melt; recover and allow to set for 5 or so minutes before serving.
