In my College years, I was first Introduced to ONE of my many favorite Chain restaurants to eat… Cheddar’s! I like Cheddar’s because they serve a wide variety of food, its normally a quieter atmosphere and both family and budget friendly! I have a few favorites on their menu… one of them being their Mango Tilapia!

One of my Close friends introduced me to this dish and I loved it! So much so that I even got my Dad hooked on it! My dad was recently talking to me about how much he loved this dish, so I decided why not come up with my own rendition! I am so glad that I did because it was so easy and even better with my own fresh ingredients!!

Making Mango Salsa

  • Make sure to to lay the fish out the day of cooking unless using fresh fish which is even better!
  • Start making your Mango Salsa…you will need:
    • 1 Ripe Mango- Mango should feel slightly soft when lightly squeezed.
    • Red onion
    • Jalapeno
    • Red bell Pepper
    • Cilantro
    • Lime
  • Start by peeling and dicing your mango into small cubes.
  • Dice up 1/3 Cup of both onion and bell pepper into small pieces.
  • Chop a Jalapeno into very small pieces. ( You may use the whole Jalapeno if you would like a spicier salsa) I prefer this recipe with just a hint of Spice!
  • Lightly chop your cilantro- you will need about 1/3 Cup.
  • Add all your chopped vegetables, fruit and cilantro to a medium size bowl and Squeeze a half a large lime over top; mix well.
  • Allow to set for at least 30 minutes- for best flavor.

Making the Mango Tilapia

  • Start by making White rice according to directions; I use About 1 Cup For this Recipe- you can make more if you want a larger portion.
  • Place your tilapia on a couple layers of paper towels and soak up extra moisture on both sides of the filet.
  • Lightly spray Filet with some cooking oil or rub manually.
  • Liberally spray a large Non stick skillet with cooking oil or use about 2 tsp. of oil on the bottom of the pan. Heat on medium high heat.
  • Mix together; Salt, Pepper and Paprika in a small bowl and lightly rub onto both sides of the Tilapia.
  • Place filet into your well heated skillet and allow to cook on each side for 2-3 Minutes until lightly seared on both sides.
  • Remove from Skillet and serve each Filet over a bed of rice then generously garnish with your mango Salsa!

I absolutely love everything about this dish! It is soo easy, on the healthier side,and is packed with soo much flavor!! I love that you could serve this dish on its own or you can pair it with so many of our favorite side dishes- steamed vegetables, baked potatoes or you can even break up your left over fish and serve as a taco! Mango Tilapia

Mango Tilapia is a Lightly Seared Tilapia served over a bed of Rice and Garnished with a fresh and tasty batch of Mango Salsa!

Ingredients

Tilapia

  • 5 Tilapia filet
  • 1 Cup White Rice Cooked
  • 1/2 Teaspoon Salt
  • 1/2 Teaspoon Pepper
  • 1/2 Teaspoon Paprika
  • Cooking oil About 1 1/2 Tablespoons Total

Mango Salsa

  • 1 Medium Size Ripe Mango Diced small
  • 1/3 Cup Diced Red Onion
  • 1/3 Cup Diced Red Bell Pepper
  • 1/3 Cup Cilantro Lightly Chopped
  • 1/2 Jalapeno Finely Diced Use whole for more spice
  • 1/2 Large Lime

Instructions

Mango Salsa

  • Peel and dice mango into small cubes.
  • Slice both onion and bell pepper into a small dice.
  • Chop up Jalapeno into very small pieces. ( You may use the whole Jalapeno if you would like a spicier salsa) I prefer this recipe with just a hint of Spice!
  • Lastly; chop Cilantro, then add all chopped ingredients into a medium size bowl.
  • Juice half of a lime over top of your mixture and mix well. Allow to set for at least 30 minutes for best flavor.
