Slice both onion and bell pepper into a small dice.
Chop up Jalapeno into very small pieces. ( You may use the whole Jalapeno if you would like a spicier salsa) I prefer this recipe with just a hint of Spice!
Lastly; chop Cilantro, then add all chopped ingredients into a medium size bowl.
Juice half of a lime over top of your mixture and mix well. Allow to set for at least 30 minutes for best flavor.
Tilapia
Start by making White rice according to directions; I use About 1 Cup For this Recipe- you can make more if you want a larger portion.
Liberally spray a large Non stick skillet with cooking oil or use about 2 tsp. of oil on the bottom of the pan. Heat over medium high heat.
Place tilapia on a couple layers of paper towels and soak up extra moisture on both sides of the filet.
Lightly spray Filet with some cooking oil or rub it on some manually.
Mix together; Salt, Pepper and Paprika in a small bowl and lightly rub on both sides of each tilapia.
Place filet into your well heated skillet and allow to cook on each side for 2-3 Minutes until lightly seared on both sides.
Remove from Skillet and serve each Filet over a bed of rice then generously garnish with your mango Salsa
