You can still make the traditional crisscrossed version with these cookies and they are equally moist as they are delicious! Ingredients

  • 1 Stick or 1/2 Cup Butter Softened
  • 2/3 Cup Brown Sugar
  • 1/3 Cup White Sugar
  • 1/2 Cup Peanut butter
  • 1 Egg
  • 1/2 teaspoon Vanilla
  • 1 C. + 2Tablespoons All Purpose Flour
  • 1/2 tsp. Baking Soda
  • 1/2 teaspoon Baking Powder
  • 1/8 teaspoon Salt

Peanut butter Glaze

  • 6 Tablespoons Salted Butter
  • 3/4 Cup Brown Sugar
  • 2 1/2 Tablespoon Milk
  • 1/2 teaspoon Vanilla
  • 1 1/2 Tablespoons Peanut butter
  • 3/4 Cup Powder Sugar

Instructions

  • Preheat oven to 350
  • Using a medium size mixing bowl or your kitchen aid mixer; cream together the softened butter and both sugars for a couple minutes or until light and fluffy. Add your egg, peanut butter and vanilla.
  • In another bowl sift together your remaining dry ingredients then slowly add to your mixer until well combined.
  • Using a medium size scoop; scoop onto a large cookie sheet, leaving at least 1 1/2 in. space between each cookie. You can either leave them as is, in a round ball or flatten with a fork dipped in sugar for more of the traditional style cookie.
  • Place in the oven and bake for 6-8 minutes. ( mine take only 6- 7 min) Remove from oven and allow to cool on the pan 2-3 minutes; remove and place on cooling racks. Bake all cookies before makinng glaze so glaze doesnt set up.

Peanut butter glaze

  • Using a medium size saucepan;melt your butter ober medium heat.
  • Add your brown sugar and bring to a boil. Lower heat to a medium low and allow to cook for 2 minutes.
  • Stir in milk and vanilla and heat thru for 1 more minute. remove from heat; Stir in peanut butter and powder sugar.
  • Glaze each cookie using a large tablespoon working quickly to keep glaze from setting up. If glaze starts to set up before done, place back on the stove on very low heat just to until workable again.

Notes

Wanting to make these in a hurry? A trick to getting your butter soft without laying it out or melting it is putting it in the microwave and DEFROST for about 10 seconds!!

Hi! I apologize, I just saw your question and the T. in my recipes mean Tablespoon. I have been trying to edit this in all my recipes, as you are not the first to ask me this! My apologies again for the delay and for any confusion.

I needed a glaze for 2-dozen banana-nut cupcakes & Google found your recipe for me. This glaze is spot-on outstanding on my cupcakes. I only cooled the cupcakes 15 minutes and applied the glaze while they were still a bit warm, knowing from your comments it was going to set up quickly. (You’re right-WORK FAST!) They cooled down together and couldn’t look more perfect. Just perfect flavor too, with the banana in the cupcakes, & so much nicer than a gloopy blob of buttercream would’ve been.
