Over the last couple of months I have had a few people ask me if I had a Chicken Salad recipe and this is the recipe that I have given. This is not an original from me, I really do not know where it originated, its just one that I use and many people that I know use it as well. This is just a simple chicken salad recipe which may be why I like it so good!

These are a great addition to your everyday week, a cold lunch for your hubby or for parties of sorts! You can serve them on any bread of your choice… although my favorite is buttery croissants! A lot of people I know have had these before but didn’t know quite how to make them and if that is you…well here you go, I hope it doesn’t disappoint!

Easy Chicken Salad
Ingredients
- 2 Large Boneless Chicken Breast
- 1-1 1/4 C. Mayo To desired creaminess
- 1 T. Honey
- 1 tsp. Lemon Juice
- 1 C. Red Grapes quartered
- 1/3 C. Celery Stick Diced small
- 1/2 C. Chopped Pecans (optional)
- 1/4 tsp. Salt or To taste
- 1/8 tsp. Pepper
- 1/2 tsp. Dill weed
Instructions
- In a medium pot, boil your chicken over medium low for about 20 min; remove from heat, drain and allow to cool some. You can dice your celery and grapes during this time.
- Once Chicken has cooled; cut pieces in half and put in a food processor. Pulse your chicken until it is your desired consistency. I personally make it pretty fine. - If you do not have a food processor then you can manually shred with forks or if you do have a kitchen aid with a dough hook then place chicken in mixer over medium low speed until shredded.
- In a medium size mixing bowl, add your chicken and all other ingredients; Mix well. Place in Refrigerator to chill for at least an hour.
- Spread onto your favorite bread and Serve!
Such a classic who doesn’t love a good chicken salad and then served on a buttery croissant. Just delightful! I wish I had one of those chicken salad croissants to enjoy right now =)
