Banana Cake

We love to eat fruit at our house so our grocery list always consist of 3-4 different kinds of fruits. We like to change it up a bit in variety but one that is always on our list are Bananas! We love eating bananas and it makes an easy snack on the go for for my little ones! The only problem is… we don’t always eat them all before they start to get mushy and no one likes a mushy banana!!! So what do I do with them??? One recipe I like to make is this here recipe for Banana Cake with Peanut butter Cream Cheese frosting!

This recipe for Banana Cake has the best of both worlds… Bananas and peanut butter!! I can not express to you how good this is, you will just have to give it a try!

Normally I only have 2-3 Bananas that go bad before we get to them so I only make a one 9 in round cake pan but you can always double this and make a double layer cake or even one large 9×13 sheet cake. Just make sure to double your frosting as well!

How To make this Banana Cake?

It really pretty Simple..

  1. Start with mixing your cake batter.. All you need is Brown Sugar, White Sugar, Butter, a couple ripe bananas, vanilla,milk, sour cream and Flour and Baking soda and baking Powder.

2. Just pour this into a round, oiled and floured Cake pan and bake for 30-35 Minutes.

3. Take a knife around the edges to ensure its loose then allow to cool.

4. Carefully turn onto a plate. Allow to cool further until cake is no longer warm.

5. Mix your Peanut butter cream Cheese Frosting and frost the cake!

There you have it! A Delicious banana cake with my favorite Peanut Butter Cream Cheese frosting! Try not to eat all the frosting before you finish frosting that Cake! 😉

Banana Cake

A easy banana cake to get rid of those mushy bananas! The best part is this Peanut Butter Cream cheese Frosting that makes this cake Sooooo good!

Ingredients

Banana Cake

  • 5 Tablespoons Softened Salted Butter Add 1/8 tsp of Salt if using Unsalted Butter
  • 3/4 C. Sugar
  • 1/4 C. Brown Sugar
  • 3/4 C. Smashed Bananas About 2 Bananas
  • 1 tsp. Vanilla
  • 1 Egg
  • 1 1/2 C. All Purpose Flour
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Baking Powder
  • 1/2 C. Milk Or Butter milk
  • 2 Tablespoons Sour Cream

Peanut Butter Cream Cheese Frosting

  • 4 oz. Cream Cheese softened
  • 1/2 Stick Butter softened
  • 1 T. Peanut butter
  • 1 3/4 C. Powder Sugar
  • 1/2 tsp. Vanilla
  • 1/2 C. Chopped Pecans Optional

Instructions

Banana Cake

  • grease then line a cake pan with parchment paper and lightly oil parchment paper as well.
  • Preheat oven to 350- oil and flour a 9 in. round cake pan.
  • Using a mixer; mix together your Butter and sugar till creamy over high speed for 2-3 minutes.
  • Add smashed bananas, vanilla and eggs.
  • Mix together flour,baking soda and salt; pour into the batter. Mix just till well combined.
  • Add in Milk and sour cream and mix till just combined.
  • Pour into cake pan and bake for 30-35 min or until tooth pick inserted comes out clean. Take a knife around the edges to ensure it is loosened from pan. Allow to cool.
  • Carefully turn upside down onto a Plate. (You may want to use a knife to help level the cake if not level) Allow to cool further while making frosting.

Peanut butter cream Cheese Frosting

  • Using a mixer; blend your cream cheese and butter until smooth; add peanut butter. Gradually add in your powder sugar and mix well. Lastly, mix in your vanilla and pecans if using. Frost your cake.

    My boyfriend loves banana pudding and cream cheese so when I saw your banana recipe I have to make it soon.
    I have learned that the organic banana last a lot longer than the store brand, and have a better flavor. Thanks and great article.
