Loaded Potato Soup

Now that it is officially fall.. I wanted to start this season out with my favorite recipe for Potato Soup! there are several different foods that I love to eat during the cold months that I call “Comfort Food” like these Creamy baked macaroni and cheese, or this recipe for Creamy Vegetable soup but nothing quite screams Comfort to me like a Good ole bowl of Potato Soup…Loaded Potato Soup At that!

I absolutely love just about any kind of Soup or Stews! There is just something about it that makes me feel happy, warm and Cozy! I actually love soup soo much that it really doesn’t matter what season it is I could eat it! Because of this… I really never understood the whole soup as a fall or winter course! We eat all of our other food Hot as well ( at least I do) Why cant we eat soup year around?!?  🙂

Okay.. okay.. just had ask! Either way, if you like to eat soup year around or just in the chillier months; this is a great Potato soup to try!

I just had to share this story… but while I was working on making this soup that you see in the picture, my sweet husband got the niche to start baking! He does this sometimes… which I cant complain because look what he decided to make!

Homemade Doughnuts!! talking about comfort food.. :0 Just so you know he does not Decide to cook very often but he does tempt to and he does pretty good! I will say that I am surprised that my Potato Soup didn’t get scorched with me trying to walk him through some of the dough making process! but in the end we had both Potato soup and Doughnuts for dessert… and 10 more extra Pounds!

Cheesy Loaded Potato Soup

This is a Delicious recipe for a Cheesy Potato Soup.. loaded with bacon cheese and Sour cream!

Ingredients

  • 4-5 Slices bacon sliced in half
  • 1/2 Medium Onion Diced small
  • 2 Cloves Pressed or chopped Garlic or 1/2 tsp. of Garlic Powder
  • 6 C. Cubed Potatoes (About 8 Medium)
  • 5 C. Chicken Broth
  • 4 T. Butter 1/2 Stick
  • 1/4 C. All Purpose Flour
  • 1/4 tsp. Pepper
  • 1/2 tsp. Salt
  • 1 3/4 C Milk Divided
  • 2 1/2 C. Shredded Cheddar Cheese I like to use Sharp Cheedar
  • 3/4 C. Sour Cream

Garnish

  • Shredded Cheese
  • Sour Cream
  • Chives
  • bacon

Instructions

  • In a large pot over medium heat cook your Bacon until crisp. Remove and crumble; set aside.
  • Leaving about 2 T. of your bacon grease in your pot; add your diced onion and cook till tender.
  • Add yours cubed potatoes and chicken broth to your pot and bring to a rolling boil. Cover; and reduce heat to medium- low. Cook for about 9-10 minutes or until potatoes are tender.
  • In the meantime, in a separate skillet over medium low heat; melt your butter. Add your flour, salt and pepper. Cook this for 1 minute then quickly whisk in** 1 C ** of your milk. ( This will be very thick)Lightly mix in to your pot of potatoes.
  • Lastly add your remaining 3/4 C. of milk, Bacon ( You can reserve some for garnish), Cheddar cheese and Sour cream. Stir until just combined.
  • Serve as is or garnish with additional cheese, Sour cream, Bacon or Chives!
