Good afternoon everyone! I have got a new favorite of mine I would like to share. This is a stuffed pepper recipe only with a Philly cheesesteak twist; Philly cheesesteak Stuffed Peppers! I love these…  my kids on the other hand are not a huge Bell pepper fan so they only ate the inside and wasted the peppers. : /

If you do like Peppers though, I hope you will give this a try! It is filled with rice, steak , onions, mushrooms and  cheese! I love making these  because its something different for a change.. that isn’t made with Chicken! ( I have a tendency of cooking a lot of chicken ) 🙂

Philly Cheese Steak Stuffed Pepper

Green Peppers all stuffed with Rice, steak, onions, mushrooms and Cheese! I like to serve with Roasted red Potatoes!

Ingredients

Peppers

  • 4 Peppers Sliced in halves from low top to bottom
  • 1/2 C. Rice Pre cooked in 1 C. of Beef Broth
  • 2 T. Cooking oil
  • 14 Oz. Beef shaved steak Sliced really thin
  • 1 C. Mushrooms Diced
  • 1/2 large Onion Diced
  • 1/2 C. Shredded Cheddar Cheese
  • 8 Slices Provolone Cheese Sliced Thin

sauce

  • 1/3 C. Mayo
  • 1/2 T. Mustard
  • 1/2 T. Vineger
  • dash Salt,and pepper

Instructions

  • Premake your rice, using 1 C. of beef broth;bring to boil and add rice. Reduce to low heat and simmer covered for 15 min. Once done remove from heat and set aside.
  • Preheat oven to 375
  • Cut each pepper in half from top to bottom. Remove tops. seeds and membranes out of each pepper. Place in large Oiled Casserole dish.
  • Mix all ingredients for sauce in small bowl and set aside.
  • In a large skillet ( I like to use cast iron), heat 2 T. oil on medium high heat; add your steak and lightly sear. Throw in your vegetables, and cook until tender. Lastly toss in your rice and heat thru. Remove from heat.
  • Stir in your Cheddar Cheese and sauce ; then spoon your mixture into each pepper until each one is stuffed full. Tightly Cover with foil and Place in oven; for 35 minutes.
  • Remove from oven; and cover each pepper with provolone Cheese. Place back into oven uncovered for 8-10 more minutes; until cheese is starting to brown and bubble.
  • Remove and Serve.i like to serve mine with baked potatoes.
