Hello! Thought I would start today off with a easy little side dish recipe to any Tex-Mex meal. This is called Cilantro Lime rice! I love the additional flavor that cilantro gives to dishes and in this rice it taste soo good combined with the fresh lime juice and salt!

This is a great side to add to some of your favorite Mexican dishes! I like to Cook it with enchiladas, quesadillas, baked fish, and one of my favorites is what I call my “At Home Chipotle”. If you ever had Chipotle, Moes or Qdoba … then you know what this is! Its an easy meal that I actually learned partially during my Bible college years!
This is rice cooks perfectly so that you have well defined white rice and not just the mushy mess! So make sure you follow all the directions!

Cilantro Lime Rice
Ingredients
- 1 1/2 C. Long grain White Rice
- 2 3/4 C. Water
- 2 T. Olive oil or Canola Oil or Oil of your Choice
- 1/2 tsp. Sea Salt
- 1/2 C. Fresh Cilantro Leaves
- 1 Small Is Juiced To taste
- 1 T. Butter
Instructions
- First Precook your rice; bring 2 3/4 C. of water and 1 T. of oil to boil in a saucepan. Add in your rice until it returns to boil, cover and reduce heat to low and allow to simmer for 15 minutes. Remove from heat; allow to set for 5 minutes covered. Fluff rice and place in covered container for at least 1 hour in the refrigerator or the night before.
- When ready to cook, heat the remaining 1 T. of oil and butterin a Large saucepan over medium heat.
- Pour your rice into your sauce pan; allow to heat thru and coat with your oil.
- Lastly; add your cilantro, lime juice and salt. Just mix till combined and Serve!
