I almost hate to write the word perfect before anything. I realize that perfection is an opinion in most cases and means lacking nothing. I do feel confident enough to say that these cookies are about as close to perfection as I can make them and I have had A LOT of trial and error! So today I am going to present to you, how to make”in My opinion'” the Perfect no Bake Cookies!

It’s Just No bake cookies… Right?
Yes! They are just no bake cookies and you would think that they were the easiest cookies around to make! I will say that once you figure out the key to making them, then.. yes they are some of the easiest and quickest cookies!
I am embarrassed to admit that I could not make these cookies until after I got married at age 24! In fact I tried to make them a lot growing up and they would either be too dry or too tacky!
I will never forget when my husband, (then boyfriend) told me that His favorite cookies were No Bake Cookies. I remember feeling soo bummed! They say the key to a man’s heart is his stomach and here I couldn’t even make His favorite Cookie! NO BAKE cookies at that!
This is when I got desperate! I kept trying and asking around to those that I knew could make them. No one really had any answers for me other then what I knew I was already doing!
Finally, one day at my Mother- in-Laws, I was sharing my dilemma and she speaks up and says ” you have to make sure to cook them on a low heat”. I thought, that is the only thing different anyone has ever told me and sure enough it was the KEY! #ThankfulForMyMotherInLaw 🙂
That along with a few other tips are Key to getting moist and creamy No bake cookies. Here is what I have came up with..
- Use more peanut butter then cocoa
- Cook with a Good heavy saucepan
- Less Oats– prevents dryness
- Make Sure to Cook on over a low-medium low heat– Like 3 or 4
- Lastly Make sure to cook at Exactly ONE minute– After it is a rolling boil!
There you have it, what I have accumulated over the last several years of cooking these Cookies! So a big thank you goes to my mother in law as well as one of my biggest No Bake Critics- My Husband. 😉
Perfect No Bake Cookies
Ingredients
- 1 Stick Salted Butter 1/2 Cup
- 2 Cups Granulated Sugar
- 1/2 Cup Milk
- 1/4 Cup Cocoa Powder
- 1/2 Cup Creamy Peanut butter
- 1 tsp. Vanilla extract
- 2 3/4 Cups Oats
Instructions
- Lay out a couple feet of Parchment paper on to your kitchen Counter. Have your peanut butter and oat measurements ready before cooking.
- Using a heavy saucepan over low or medium low heat (around 4) ; combine butter, sugar, milk, and cocoa powder. Bring to a rolling boil- a boil that does not stop when stirred- then set a timer for exactly one minute. Remove from heat.
- Working quickly; Mix in peanut butter and vanilla; then stir in oats.
- Using a large spoon; drop by the spoon fulls on to your wax paper to the desired size you like.
- Allow to cool for about 15-20 Minutes or until they have set up.
They were perfect!
