March is here! I love this month for so many reasons! First of all, Spring begins!! I am one of those people that love to see what each new season brings, but Spring may be my absolute favorite as it represents new Life! March also brought forth life for My husband, My first son and Myself! Birthdays are not as exciting for my husband and I… as we are now in our 30s!! My big boy will be turning 4 this month, and its making this momma sad to see him coming out of his toddler years, but excited to see what this next year will hold for Him! To Celebrate with Him and ‘Us”, here is an easy Recipe for Birthday Rice Krispie Treats!

My Son Loves.. Rice Krispie treats, especially the Birthday Flavor ones! Recently, we were Grocery shopping and he came to me holding a box of Birthday Rice Krispies and says ” Momma, Can we please get these… I Wove these.” As Ornery as this little boy can be sometimes.. he also can be the sweetest!! Needless to say, despite my Strict, Budget focused Grocery list, they were in the cart!

I finally decided to just tackle making these myself… with my already favorite recipe for Rice Krispies! If you are just looking for a plain recipe for Rice krispies. these are great! I really y could just post that recipe alone and I may still do it but for now…its Birthday Time!

  • Using a double boiler or a heat safe bowl over a cup of water in a small saucepan like I did.
    • You do not want the water actually touching the bowl. You do not want direct heat or chocolate will scorch.
  • Pour 1 2/3 Cup chocolate into your top boiler or bowl with 1 T. of shortening; allow to heat over medium low heat until chocolate is smooth.
  • Note: you may also do this in the microwave for about 1-2 minute; Making sure to Remove EVERY 15-20 Seconds to prevent scorching.

  • Spread evenly over your parchment paper; keep the double boiler out for remaining chocolate.
  • Using a Large Stock pot; melt one stick of Salted butter over medium low heat.
  • Stir in 7 Cups of mini Marshmallows; allow to completely melt while stirring; remove from heat.
  • Stir in 1/2 teaspoon of vanilla extract.
  • Lightly fold in about half of your Rice krispie Cereal, Remaining mini Marshmallows ( App. 1 Cup), then the rest of your cereal till just combined.
  • Pour the mixture onto your Chocolate and LIGHTLY Spread with a spatula.
  • Spread evenly in the pan; only applying very ,very light pressure to smooth out. You do not want to smash into the pan or they will not be as soft and gooey!
  • Melt the reaming 1/3 Cup of chocolate over medium low heat with remaining shortening; then drizzle over the top of the rice krispies.
  • Lastly; sprinkle with about 2 Tablespoons of your favorite sprinkles!

  • Allow for these to set up 45- 1 hour before cutting into about 16 small rectangles; using a sharp knife.
    • Make sure to Cut all the way through to the chocolate!
  • Lift of parchment paper and store in a air tight container or serve!

Birthday Rice Krispie Treats- Perfectly soft treats with mini marshmallow chunks and coated and drizzled in White Chocolate and Sprinkles!

Ingredients

  • 2 Cups White Chocolate Morsels Divided into 1 1/3 C. and 1/3 C.
  • 2 Tablespoons Shortening Divided into 1 T. and 1/2 T.
  • 1 Stick Salted Butter 1/2 Cup
  • 1 16 oz. Bag of Mini Marshmallows About 8 Cups
  • 1/2 teaspoon Vanilla extract
  • 8 Cups Rice Krispie Cereal
  • 2 Tablespoona Sprinkles
  • cooking Spray

Instructions

  • Spray a 9x13 pan with cooking spray, Lay down parchment paper; where it slightly comes out further on both ends. Spray again with cooking oil; over top off the parchment paper.
  • Using a double boiler or a heat safe bowl over about a cup of water in a small saucepan; Pour 1 2/3 Cup chocolate morsels and 1 tablespoon of shortening into your top boiler or bowl; allow to heat over medium low heat until chocolate is smooth. Be sure to stir to prevent scorching the chocolate. *Note Below*
  • Spread melted chocolate evenly over your parchment paper; set aside. Keep the double boiler out for remaining chocolate.
