Vanilla Custard
Preheat oven to 400
Line a 8x10 dish or medium casserole dish with vanilla wafers, then a layer of bananas; set aside.
Using a medium size saucepan; add 2 Cups of milk and beaten egg yolks( save your egg white for the meringue) ; allow to come to a boil over medium heat then turn to medium low.
In a small mixing bowl; mix sugar, flour, salt, and remaining 1 C of milk. Blend well; then slowly whisk into your hot mixture. Allow to simmer until thickened. About 3-5 minutes. Make sure to keep stirring to prevent burning. Remove from heat and stir in vanilla,
Pour half of your custard over bananas and wafers; do another layer of wafers bananas; finish off with remaining custard. Set aside.
Meringue Topping
Whip 3 eggs whites and cream of tartar with a Mixer over medium-high speed till it starts to look stiff. Turn mixer to a medium speed and slowly add in your sugar. Mix till soft peaks begin to form.
Spread Meringue on top of warm pudding making sure to seal around the edges tightly. ( I like to work around edges first then fill in the center)
Place in oven and brown for 4-6 minutes. Just till golden brown. Make sure to watch to prevent burning.
Allow to come to room temperature then chill in refrigerator.
