Honey Cilantro Roasted Sweet Potatoes

Ingredients

  • 5 Cups Diced Sweet Potatoes About 2 Large
  • 3 Tablespoons Melted Butter
  • 1 large Clove Garlic Pressed Or 1/2 tsp garlic powder
  • 1/2 teaspoon Cumin
  • 1/2 teaspoon Chili Powder
  • 1/4 teaspoon Salt more for Garnish
  • 1/8 teaspoon Pepper
  • 2 Tablespoons Honey
  • 1/2 Lime juiced
  • About 2 Tablepoons Chopped Fresh Cilantro

Instructions

  • Preheat oven to 400- Spray or Line a large baking sheet with foil or Parchment paper.
  • Peel, Cut and Wash sweet Potatoes. Using a well sharpened knife; Carefully, Dice potatoes into large cubes. Place into a medium size mixing bowl and set aside..
  • In a medium size Microwave safe bowl or over the stove melt butter.
  • Whisk in all your dry Spices, Garlic, Honey and Lime until well Combined. Make sure all ingredients are room temperature or butter will set up.
  • Pour out evenly onto your prepared pan making sure not to over lap any of the potatoes or they will end up soggy over crisp!
  • Place in Preheated oven and Bake for 20-25 Minutes- making sure to flip at 10-12 minutes.
  • Once potatoes are crisp on the outside and tender on the inside; remove from oven; place onto serving dish and sprinkle with Fresh cut cilantro, and a light coat of salt!
