Honey Cilantro Roasted Sweet Potatoes

- 5 Cups Diced Sweet Potatoes About 2 Large
- 3 Tablespoons Melted Butter
- 1 large Clove Garlic Pressed Or 1/2 tsp garlic powder
- 1/2 teaspoon Cumin
- 1/2 teaspoon Chili Powder
- 1/4 teaspoon Salt more for Garnish
- 1/8 teaspoon Pepper
- 2 Tablespoons Honey
- 1/2 Lime juiced
- About 2 Tablepoons Chopped Fresh Cilantro
Preheat oven to 400- Spray or Line a large baking sheet with foil or Parchment paper.
Peel, Cut and Wash sweet Potatoes. Using a well sharpened knife; Carefully, Dice potatoes into large cubes. Place into a medium size mixing bowl and set aside..
In a medium size Microwave safe bowl or over the stove melt butter.
Whisk in all your dry Spices, Garlic, Honey and Lime until well Combined. Make sure all ingredients are room temperature or butter will set up.
Pour out evenly onto your prepared pan making sure not to over lap any of the potatoes or they will end up soggy over crisp!
Place in Preheated oven and Bake for 20-25 Minutes- making sure to flip at 10-12 minutes.
Once potatoes are crisp on the outside and tender on the inside; remove from oven; place onto serving dish and sprinkle with Fresh cut cilantro, and a light coat of salt!
