Just take a look…German Chocolate cookies, Italian Cream Cookies, Samoa Cheese Pie, and even my Snow ball Cookies has Coconut extract! :0 Needless to say, today’s recipe will be another coconut recipe! So for all my fellow Coconut lovers, this is a recipe for Coconut Butterscotch Cookies!

I know that was a mouth full to say but these are also a mouth full of moist, yummy cookies! 🙂 Before I get into this recipe; I have a small confession! This recipe was actually partly my husband’s idea!
So I already had a recipe for coconut cookies and he was craving something with butterscotch and thought of these cookies! I thought that maybe he was on to something and so we picked up some Butterscotch Chips and I re adapted this recipe just a tad and Voila!
Making Coconut Butterscotch Cookies…
- Preheat oven to 350
- Sift Flour, baking soda and salt and set aside.
- Cream butter and Sugars over medium low speed with mixer for abou 2 minutes.
- Add Egg and Vanilla and mix another minute.
- Add half of the flour mixture; scrape sides and then add the remaining flour.
- Using a spoon or spatula- mix in Butterscotch chip and coconut until well combined. This dough will be a little thick.
- Scoop out onto a large cookie sheet with a medium size cookie scoop or form about 1 in. balls with hand at about 1 in. apart.
- bake in oven for 7-8 Minutes- Mine take about 8. The middle will still seem a little under cooked.
- Allow to cool on pan 3-4 Minutes before removing.

Coconut Butterscotch Cookies
Ingredients
- 1/2 C. Butter 1 Stick Softened
- 1/2 C. Brown Sugar
- 1/2 C. White Sugar
- 1 Egg
- 1 tsp. Vanilla
- 1 1/4 C. All Purpose Flour
- 1 tsp. Baking Soda
- 1/8 tsp. Salt
- 1 C. Coconut
- 3/4 C. Butterscotch Chips
Instructions
- Preheat oven to 350
- Combine Flour, baking soda and salt; set aside.
- Using your mixer; mix together softened butter and both sugars till light and fluffy. ( A quick trick to get softened butter is to set in microwave for about 30 sec. on Defrost)
- Add in your egg and vanilla and mix in.
- Pour in your dry ingredients and mix for a couple more minutes; making sure its mixed well. remove from mixer and fold in your. coconut, butterscotch and pecans if using. (This will seem a little thick)
- Using a medium cookie scoop or hands to roll out into about 1 in. balls; place on cookie sheet and bake in oven 7-8 minutes. Cookies will look slightly underrdone in center but will finish baking on cookie Sheet.
- Allow to cool on baking sheet for 3-4 minutes then place on cooling rack.
