Lazy day Peach Cobbler

I call this Lazy day Peach cobbler because it is one of my go-to recipes on a lazy day! I actually made this recipe 2 times this past weekend upon request and of course I didn’t mind considering I could almost do it with my eyes closed!

Easy Peach Cobbler

Besides this recipe being super easy, it is also super Delicious! This one is made with Peaches but I have changed it up and made it with strawberries, blueberries and Blackberries! Just pick your fruit; whip it up then add a scoop of your favorite Ice cream!

Making this Peach Cobbler

  • You want to Pour your batter in first; Before you add the peaches. Don’t worry the batter will all come to the top and this helps all the ingredients to infuse perfectly together in this recipe! Do not mix!
  • You can use canned peaches or Fresh peaches just to be sure to see my notes for each in the instructions.
  • I Do not completely drain my peaches but just enough off where the peaches are not swimming but resting in the juices if that makes sense!
  • When adding the peaches; I like to spoon them out evenly over the batter; juices and all! (I promise it will all cook up)
  • Makes sure not to over bake this cobbler; you want this cobbler to be moist and gooey and not dry! I like to bake just until the center is set. Different ovens may vary so start checking at 35 minutes!

Ingredients

Batter

  • 1 Stick Butter
  • 1 C. Self Rising Flour
  • 1 C. Sugar
  • 1 Large Egg
  • 3/4 C. Milk

Canned peaches

  • 1 29 oz Can of Peaches
  • 1/3 C. Sugar
  • 1 Tsp. Vanilla

Fresh Peaches

  • 4 C Fresh sliced peaches About 7 medium peaches
  • 1/2 C Sugar
  • 1 T. Lemon Juice
  • 1 Tsp. Vanilla

Instructions

  • 1. Preheat oven to 350
  • 2. Place butter in a 9 x 13 Casserole dish; set in oven to melt.
  • 3.If using can peaches- Open your can of peaches and drain just the juice right off the top of the can. (I drain about 1/2 C. and leave the rest) Pour them into a small mixing bowl and add 1/2 C. Sugar and your vanilla. Fresh peaches- see below
  • 4. In a medium size mixing bowl add flour, sugar, egg, and milk; stir till combined.
  • 5. Remove your Casserole dish from the oven and pour in your batter then spread peach mixture evenly over the batter. (yes, over the batter, juice and all)
  • 6. Place in oven and cook 35-45 min. Be sure not to over bake.* ( mine takes about 40)* Remove and allow to cool 10 minutes before serving. Top with Ice cream,

Fresh peaches

  • Peel and slice peaches and place into a medium saucepan with lemon juice and sugar over medium high heat.Allow to come to a boil while stirring; remove from heat and add vanilla.
  • Continue back to step 4 above.
