Cilantro Lime Rice
A great addition to any of your Tex-Mex meals, White rice combined with cilantro, Lime Juice and a hint of Sea Salt!

- 1 1/2 C. Long grain White Rice
- 2 3/4 C. Water
- 2 T. Olive oil or Canola Oil or Oil of your Choice
- 1/2 tsp. Sea Salt
- 1/2 C. Fresh Cilantro Leaves
- 1 Small Is Juiced To taste
- 1 T. Butter
First Precook your rice; bring 2 3/4 C. of water and 1 T. of oil to boil in a saucepan. Add in your rice until it returns to boil, cover and reduce heat to low and allow to simmer for 15 minutes.
Remove from heat; allow to set for 5 minutes covered. Fluff rice and place in covered container for at least 1 hour in the refrigerator or the night before.
When ready to cook, heat the remaining 1 T. of oil and butterin a Large saucepan over medium heat.
Pour your rice into your sauce pan; allow to heat thru and coat with your oil.
Lastly; add your cilantro, lime juice and salt. Just mix till combined and Serve!
