Mix the Taco Season and Ranch dressing in a small bowl.
Heat 1/2 T. of oil in large skillet over medium heat.
Dice the vegetables and toss in heated skillet until tender and lightly browned. Remove from heat and set aside on a plate.
Cut down the middle of your chicken breast internally. Heat another 1/2 T. of oil over medium high heat; place chicken breast in skillet and lightly seer on both sides. Lower heat to a medium low then continue cooking 3-5 Minutes on each side or till chicken is cooked through. remove from Skillet and allow to cool just enough to touch and dice with sharp knife; add to veggies.
Wipe out your skillet ;reheat on medium low.
Lightly brush one side of tortilla with oil. On the other side, Spread with 1 1/2 T. of your sauce over entire tortilla ; place in hot skillet.
Working quickly; sprinkle half of tortilla with 1/4 Cup Cheese, 1/2 Cup of Chicken/Veggies then another 1/4 Cup of cheese. fold over and cook for 1-2 Minutes till both sides are equally browned. remove and repeat for 5 more.
Serve with Sour cream, avocados , salsa, Chips or Rice!
