Coconut Butterscotch Cookies

- 1/2 C. Butter 1 Stick Softened
- 1/2 C. Brown Sugar
- 1/2 C. White Sugar
- 1 Egg
- 1 tsp. Vanilla
- 1 1/4 C. All Purpose Flour
- 1 tsp. Baking Soda
- 1/8 tsp. Salt
- 1 C. Coconut
- 3/4 C. Butterscotch Chips
Preheat oven to 350
Combine Flour, baking soda and salt; set aside.
Using your mixer; mix together softened butter and both sugars till light and fluffy. ( A quick trick to get softened butter is to set in microwave for about 30 sec. on Defrost)
Add in your egg and vanilla and mix in.
Pour in your dry ingredients and mix for a couple more minutes; making sure its mixed well. remove from mixer and fold in your. coconut, butterscotch and pecans if using. (This will seem a little thick)
Using a medium cookie scoop or hands to roll out into about 1 in. balls; place on cookie sheet and bake in oven 7-8 minutes. Cookies will look slightly underrdone in center but will finish baking on cookie Sheet.
Allow to cool on baking sheet for 3-4 minutes then place on cooling rack.
