Coconut Butterscotch Cookies

A yummy chewy cookie filled with Coconu and Butterscotch Chips!

Ingredients

  • 1/2 C. Butter 1 Stick Softened
  • 1/2 C. Brown Sugar
  • 1/2 C. White Sugar
  • 1 Egg
  • 1 tsp. Vanilla
  • 1 1/4 C. All Purpose Flour
  • 1 tsp. Baking Soda
  • 1/8 tsp. Salt
  • 1 C. Coconut
  • 3/4 C. Butterscotch Chips

Instructions

  • Preheat oven to 350
  • Combine Flour, baking soda and salt; set aside.
  • Using your mixer; mix together softened butter and both sugars till light and fluffy. ( A quick trick to get softened butter is to set in microwave for about 30 sec. on Defrost)
  • Add in your egg and vanilla and mix in.
  • Pour in your dry ingredients and mix for a couple more minutes; making sure its mixed well. remove from mixer and fold in your. coconut, butterscotch and pecans if using. (This will seem a little thick)
  • Using a medium cookie scoop or hands to roll out into about 1 in. balls; place on cookie sheet and bake in oven 7-8 minutes. Cookies will look slightly underrdone in center but will finish baking on cookie Sheet.
  • Allow to cool on baking sheet for 3-4 minutes then place on cooling rack.
