Birthday Rice Krispie Treats- Perfectly soft treats with mini marshmallow chunks and coated and drizzled in White Chocolate and Sprinkles!

Ingredients

  • 2 Cups White Chocolate Morsels Divided into 1 1/3 C. and 1/3 C.
  • 2 Tablespoons Shortening Divided into 1 T. and 1/2 T.
  • 1 Stick Salted Butter 1/2 Cup
  • 1 16 oz. Bag of Mini Marshmallows About 8 Cups
  • 1/2 teaspoon Vanilla extract
  • 8 Cups Rice Krispie Cereal
  • 2 Tablespoona Sprinkles
  • cooking Spray

Instructions

  • Spray a 9x13 pan with cooking spray, Lay down parchment paper; where it slightly comes out further on both ends. Spray again with cooking oil; over top off the parchment paper.
  • Using a double boiler or a heat safe bowl over about a cup of water in a small saucepan; Pour 1 2/3 Cup chocolate morsels and 1 tablespoon of shortening into your top boiler or bowl; allow to heat over medium low heat until chocolate is smooth. Be sure to stir to prevent scorching the chocolate. *Note Below*
  • Spread melted chocolate evenly over your parchment paper; set aside. Keep the double boiler out for remaining chocolate.
  • Using a Large pot; melt one stick of Salted butter over medium low heat.
  • Stir in 7 Cups of mini Marshmallows; allow to completely melt while stirring; remove from heat and Stir in 1/2 teaspoon of vanilla extract.
  • Lightly fold in about half of your Rice krispie Cereal, Remaining mini Marshmallows ( App. 1 Cup), then the rest of your cereal till just combined.
  • Pour the mixture onto your Chocolate and LIGHTLY Spread with a spatula. Spread evenly in the pan; by applying very light pressure to smooth out. You do not want to smash into the pan or they will not be soft and gooey!
  • Melt the reaming 1/3 Cup of chocolate over medium low heat with the remaining 1/2 Tablespoon of Shortening. Lastly, drizzle over the top of the rice krispies. Lastly; sprinkle with about 2 Tablespoons of your favorite sprinkles!
  • Allow for these to set up 45- 1 hour before cutting into about 16 small rectangles; using a sharp knife. Be sure to Cut all the way through to the chocolate.
  • Lift of parchment paper and store in a air tight container or serve!

Notes

Note: you may also do this in the microwave for about 1-2 minute; Making sure to Remove EVERY 15-20 Seconds to prevent scorching.
